Custom made cup cakes

  I always admired the cup cakes made by the professionals where they cover the cupcake with fondant. My opinion was that it will be too pretty to gobble down, or it would be too sweet to eat.  I decided to give it a try and pleasantly surprised. I made chocolate cupcakes and coated them with some ganache. I placed in the freezer for around an hour for them to set.  Method: Roll fondant out on powdered surface.  Cut with a scone cutter, either the smooth or frilled edge. I used the frilled edge in these. Lift and place on ganache coated cupcake.  Smooth the fondant over with your fingers so it is flush against the ganache. I used all the little fondant art I made to top it off. Painting with gold: Use gold dust Add some rose water / clear spirit alcohol Mix together and apply with paint brush. Christmas cupcakes

  HAPPY HOLIDAYS Hi everyone. I wanted to post my christmas cupcakes before I go off on holiday. I played around with the fondant and came up with a snow man with a scarf and christmas father.  I made some red velvet cup cakes and made some home made frosting.  Frosting recipe 1 cup room temperature unsalted butter 3 cups icing sugar 1tbl spn water 2 tbl spns rose water (can use milk) Beat the butter until white and fluffy. Sift the icing sugar to get the lumps out. Gradually add the icing sugar to the butter while beating. With about a cup of icing sugar left add the water and rose water. Continue beating until fluffy. Cup cake and sugar art class

I attended an awesome sugar art class, where we crafted figures out of pettinice. We then placed our creations on frosted cup cakes. It was so much of fun. The pig and cow head were my favourite. Thanks Debbie for teaching me how to craft these figures.

Macaroons

Yummy macaroons to go! After having a lovely discussion with a work colleague about macaroons and where you can really find them in South Africa, I got home thinking its really something special to learn how to make. I turned the on the TV and to my surprise one of the baking programs on the food channel were showing how to make simple macaroons.  So I decided to give it a try. Ingredients: 1 cup icing sugar 3/4 cup ground almond powder 2 egg whites room temperature (40g if you have a scale) 1/4 cup icing sugar 150ml of water Gel food colouring Method: Preheat the oven to 150 degrees Prepare oven tray with baking paper Sift the icing sugar to add air into it. Thereafter add the almond powder and mix. Place water on stove and add 1/4 cup icing sugar to it. Bring to a boil so the sugar blends into the water. White Chocolate Frosted Vanilla Yummies

White Chocolate frosted Vanilla Yummies I wanted to make some yummy fun vanilla cup cakes as a treat for my dad. So I followed the following recipe: 1 cup cake flour 1/2 cup sugar 1 teaspoon baking powder pinch of salt two eggs 1/2 cup milk 1/2 cup vegetable oil 1 teaspoon vanilla essence Blend all ingredeints together. It will be a runny mixture. Line cup cake tray with cups and fill each two thirds full. Bake for 15 - 17 minutes at 160 degrees celcius. Let it cool once done.   I then decided to coat them in white chocolate frosting I purchased at the baking store. The best thing about instant frosting is to add water to it and beat. 300 grams frosting requires 100ml of water. It becomes a lovely smooth consistency after around 5 minutes of beating. I added into a piping bag with a rose making nozel. I decorated with plastic icing flowers I had made previously.
Dreamy Vanilla & Decadent Ganache I had to let my guys at the office know that I have a new found excitement in my life of making cup cakes and sure as thought, they held me to allowing them a taste. So I decided to make them the yummiest dreamy looking cup cakes. I used the basic vanilla cup cake recipe and made two batches. I added cocoa powder to one batch to turn them into chocolate cakes. Obviously the rule is if you are going to add another dry ingredient to the recipe then you need to use less of an existing dry ingredient. So I used around half a cup of cocoa powder to give the batter a rich chocolate look and decreased the cake flour by the same amount. That way I did not compromise on ensuring the cakes bake well and come out moist. The next step was to icing them.
