Christmas cupcakes

HAPPY HOLIDAYS Hi everyone. I wanted to post my christmas cupcakes before I go off on holiday. I played around with the fondant and came up with a snow man with a scarf and christmas father.  I made some red velvet cup cakes and made some home made frosting.  Frosting recipe 1 cup room temperature unsalted butter 3 cups icing sugar 1tbl spn water 2 tbl spns rose water (can use milk) Beat the butter until white and fluffy. Sift the icing sugar to get the lumps out. Gradually add the icing sugar to the butter while beating. With about a cup of icing sugar left add the water and rose water. Continue beating until fluffy. Here are some pics of my completed cupcakes.

Cup cake and sugar art class

I attended an awesome sugar art class, where we crafted figures out of pettinice. We then placed our creations on frosted cup cakes. It was so much of fun. The pig and cow head were my favourite. Thanks Debbie for teaching me how to craft these figures.

Macaroons

Yummy macaroons to go! After having a lovely discussion with a work colleague about macaroons and where you can really find them in South Africa, I got home thinking its really something special to learn how to make. I turned the on the TV and to my surprise one of the baking programs on the food channel were showing how to make simple macaroons.  So I decided to give it a try. Ingredients: 1 cup icing sugar 3/4 cup ground almond powder 2 egg whites room temperature (40g if you have a scale) 1/4 cup icing sugar 150ml of water Gel food colouring Method: Preheat the oven to 150 degrees Prepare oven tray with baking paper Sift the icing sugar to add air into it. Thereafter add the almond powder and mix. Place water on stove and add 1/4 cup icing sugar to it. Bring to a boil so the sugar blends into the water. Beat the egg whites until it becomes foamy and add sugar water mixture. This allows the egg whites to get a shiny glaze sooner. Continue beating the egg w

White Chocolate Frosted Vanilla Yummies

White Chocolate frosted Vanilla Yummies I wanted to make some yummy fun vanilla cup cakes as a treat for my dad. So I followed the following recipe: 1 cup cake flour 1/2 cup sugar 1 teaspoon baking powder pinch of salt two eggs 1/2 cup milk 1/2 cup vegetable oil 1 teaspoon vanilla essence Blend all ingredeints together. It will be a runny mixture. Line cup cake tray with cups and fill each two thirds full. Bake for 15 - 17 minutes at 160 degrees celcius. Let it cool once done.   I then decided to coat them in white chocolate frosting I purchased at the baking store. The best thing about instant frosting is to add water to it and beat. 300 grams frosting requires 100ml of water. It becomes a lovely smooth consistency after around 5 minutes of beating. I added into a piping bag with a rose making nozel. I decorated with plastic icing flowers I had made previously.
Dreamy Vanilla & Decadent Ganache I had to let my guys at the office know that I have a new found excitement in my life of making cup cakes and sure as thought, they held me to allowing them a taste. So I decided to make them the yummiest dreamy looking cup cakes. I used the basic vanilla cup cake recipe and made two batches. I added cocoa powder to one batch to turn them into chocolate cakes. Obviously the rule is if you are going to add another dry ingredient to the recipe then you need to use less of an existing dry ingredient. So I used around half a cup of cocoa powder to give the batter a rich chocolate look and decreased the cake flour by the same amount. That way I did not compromise on ensuring the cakes bake well and come out moist. The next step was to icing them. For the chocolate cup cakes I used premixed Ganache I purchased from the local bakery shop. For a great ganache recipe go to: http://www.marthastewart.com/274420/how-to-make-ganache .   I heated the
Hi everyone. I've decided to try my hand at a bit of blogging. I've heard so much about it and how so many people have actually made a career out of blogging. So here I am. My blog will be about my cup cakes but also about my love for fashion.
Birthday cup cakes for Dad So my dad heard all about my yummy marble cup cakes I made for my nephew's birthday party. There was no way I was not going to make a fresh batch for Dad's birthday. My Dad is a man who loves doing everything and anything. I can't remember a time in my life when my Dad was not busy building, fixing or cleaning something or another around the house. From being the handy man I know him to be he has now turned into the most awesome cook. He does not give up until he gets it right. I guess a lot of him has been passed onto me. I admire him so very much...   Now for Mr Handy Man , who has every electric gadget and tool, I ventured out to my local baking shop, Bakers Bin, here in Centurion, South Africa ( bakersbin.co.za ) to find something that I could decorate the cupcakes with. There I found moulded sugar shapes where I chose the set which had the scissors, spanner, drill and saw. These were perfect for dad's cupcakes. I used the

Kiddies cup cakes

Disney edible cupcake discs It ALL started with these cute little edible discs I found at the local supermarket. They were little disney characters. My nephews 1st birthday was coming up and I wanted to do something really special, so I bought a batch of the edible characters and started doing my research on cup cakes. I finally found a recipe for a marble cake. Ingredients 1 cup all purpose flour 1 tsp baking powder 1/4 tsp salt 1/2 cup sugar 2 large eggs 1/2 cup vegetable oil 1/2 cup full cream milk 1 tsp vanilla essence 1/2 cup cocoa powder Preheat oven at 150degrees and grease line 12 cup oven tray with cup cake liners. Add all ingredients together in electric mixer and mix until everything is combined. If you are not using an electric mixer, combine all the dry ingredients first and then add the wet. Separate the mixture into half and add the cocoa to one half. I normally add 2 table spoons more of vegetable oil to the cocoa mixture to allow the cocoa to mix
